Ian Hart has a degree in Natural Sciences and uses both well known & obscure botanicals in his vacuum distillation apparatus.  By using the glassware under vacuum method this allows a very low temperature control, eliminating harsh & bitter flavours so prevalent in higher temperature distillations. His style & taste is quite unique.
